Honey-glazed pork ribs

Ingredients

800g pork ribs
½ tsp onion powder
½ tsp garlic powder
2 Tbsp honey
2 Tbsp sherry or Shaoxing wine
2 Tbsp light soy sauce
1 Tbsp oil
15 grams rock sugar (broken down into small fragments)
1/3 cup water
1 tsp vinegar



1. Wash the pork ribs, pat dry.

2. Marinate the pork ribs in the mixture of onion powder, garlic powder, 1 Tbsp of light soy sauce and 2 Tbsp of sherry or Shaoxing wine for at least one hour.

3. Pre-heat oven to 200°C.

4. Put the pork ribs on a baking sheet and bake for 60 minutes, turning the ribs every 10 minutes until golden brown on all sides.

5. Prepare the sauce:
Around 10 minutes before removing the ribs from the oven, heat 1 Tbsp oil in a small pan. Put in the rock sugar and cook in medium low heat until the sugar is melted. Add the water, honey, vinegar and l Tbsp of light soy sauce. Bring sauce to a low boil, then turn off heat.

6. Coat the ribs in the hot sauce while the ribs are still hot.
